relax with a mocktail moms!

Have you seen these super fun mocktail mixes from Crystal Light?! My creative assistant, Bridget, and I sat down in the summer sun on my deck late last week to discuss upcoming projects and thought we would give the margarita version a try.

As usual in the summer, my kids were in tow (aka, running amuck in my backyard… you know the drill), and since I couldn’t have a real cocktail because I had to take care of my itty bitties that afternoon, it was the perfect treat. Plus, in true Crystal Light style, I had no calorie guilt! {wink}

And you can’t have margaritas without chips (or at least I can’t!) so Bridget whipped up this Black Bean Salsa! It’s as tasty as it is pretty. Oh, and super easy (my favorite part!). Here’s her recipe:

  • 2 cups black beans
  • 2 cups corn (frozen or fresh)
  • 2 cups diced tomatos (fresh is best, but you’ll want to drain and seed before mixing)
  • 1 tsp lime juice
  • 1 tsp fresh cilantro
  • salt to taste

You can only find these yummy Crystal Light flavors for another 47 days so make sure you hop out to your grocery very soon and stock up! You’ll find margaritas, appletinis and mojitos and all for 5 calories a serving!

Oh, and if you’re not into the mocktails, you have to try my absolute favorite Crystal Light flavor of all time: Cherry Pomegranate. It’s super yummy and full of antioxidants. I picked it up once when we were going to be traveling thinking I could use every boost possible to keep me from getting sick and ruining my good time, and I’ve not stopped buying it since!
