Love chocolate? Me too! Love peanut butter? Me too! Love them together? Oh yes!!! This weekend I whipped up double chocolate peanut butter filling cupcakes and I couldn’t put them down!

Double Chocoalte Cupcakes with Peanut Butter Filling | Kim Byers,

And what’s better, this double chocolate peanut butter filling cupcake recipe is semi-homemade. Yep. I started with a box! {grin}

Here are the packaged items you’ll need:

  • Your own chocolate cupcake recipe, or a box of Duncan Hines Dark Chocolate Cake Mix with additives
  • Pillsbury Chocolate Fudge Icing

And for the from scratch peanut butter filling (yields enough for 24 cupcakes), you’ll need:

  • 1 stick unsalted butter, softened
  • 1 cup confectioner’s sugar, sifted
  • 1 1/2 cups smooth peanut butter
  • 1/2 teaspoon salt
  • 1 teaspoon pure vanilla extract

And the easy how to steps:

  1. Prep cake batter, set aside
  2. Mix all ingredients for peanut butter filling until smooth
  3. Layer cake batter, peanut butter filling, cake batter, peanut butter filling, and end with cake batter in cupcake baking cups.
  4. Bake at 350 degrees for 12 – 16 minutes based on your oven and elevation.
  5. Allow to cool, ice with fudge icing, serve.

I promise, your guests, your family, your co-workers, they will all be in cupcake heaven!
