10 Healthy Cold Summer Treats

Along with the summer heat come cold summer treats. And since I’m always looking for ways to keep my kids healthy, and my little one with food allergies included and happy, I buy “all fruit” treats as much as possible. Thank goodness for amazing fruit bars like Frutarre.

and as you can see wouldn’t even put them down while balloon fighting at our Memorial Day friends and family party. {grin}

There are 10 delicious flavors to choose from like Strawberry & Milk, Peach & Milk, Banana & Milk, Black Cherry, Pineapple, Lime, and more! We celebrated with the Strawberry & Milk and the Mango. Oh… the Mango! It was like eating a real one and only 60 calories!

Here’s the super simple recipe:

  • 2/3 Trop50’s Raspberry Acai
  • 1/3 Champaign (or Gingerale)
  • 1 scoop pineapple sorbet (fat free if you like!) per glass

My mom first made Peanut Butter Corn Flake Balls when I was about eight years old and they’ve graced all of our holiday parties ever since. I warn you… they are addicting.

Make Peanut Butter Corn Flake Balls for your family!

You’ll need: 

This is a no-bake recipe and here are the super simple steps:

  1. Mix sugar and Karo well in a saucepan and place over low heat until sugar melts into Karo and no longer grainy.
  2. Raise mixture to a rolling boil for one minute. (Be very careful not to burn the mixture. It will likely spindle when it’s ready.)
  3. Remove from heat and quickly add vanilla and peanut butter. Still into boiling mixture and quickly add Corn Flakes stirring constantly.
  4. Spoon into buttered pan for squares or allow to cool a few minutes, coat your hands in butter and roll.

NOTE: They will harden into a brittle like candy, but can easily be made soft again by heating for 5-7 seconds in the microwave.

Yields 20 medium balls.

Easy Carrot Cake for Easter & Garden Parties

Easter is only a few days away and how better to welcome the bunny than with carrot cake!

If you’re a great baker, make your mom’s carrot cake recipe and flat ice it with a rich buttercream frosting . . . if you’re not a great baker, no worries. This cake idea is still for you! Just order your flat iced carrot cake from your local grocer or bakery.

You can keep it simple like the top two carrot cake images, or you can create a cake topper!

You can even embellish carrot cake cupcakes. The Easter bunny will appreciate all of your carrot cake . . . no matter the size! {grin}

To embellish this easy carrot cake and these carrot cake cupcakes, you’ll need:

  • Orange and green (this one is glitter) cardstock
  • Sharp scissors (dull ones will tear your paper and make your cut choppy)
  • Lollipop sticks (available in the baking section of your local craft store)
  • Hot glue gun
  • Orange and white sixlet candies (available at your local candy store)
  • Tip: Use a cake stand with a small lip so that the candies don’t roll

To make the carrot decorations for your cake and cupcakes:

  1. Cut out the carrots. For the small cupcake carrots and side of cake carrots, think snowman, three bumps. Once you have one you like, use it as a template so your carrots are all the same size. For the larger carrots for the top of the cake, cut five bumps.
  2. For the carrot leaves, cut out a lopsided heart.
  3. Attach the leaves to the carrots.
  4. Attach the carrots to lollipop sticks. For the side of the cake, cut the lollipop stick in half and hot glue the flat end to the back of the carrot. For the top of the cake and cupcakes, glue the lollipop stick to the back of the carrot.
  5. Insert the lollipop sticks into your cake and cupcakes.

I created four themed Easter baskets (all items, even the baskets were from JoAnn Fabric & Craft Stores): science basket, baker’s basket, crafter’s basket and a gardener’s basket. I think the gardener’s basket was my favorite.
