Ice Cream Recipe

Ice cream recipes… vanilla, chocolate, strawberry, what about blueberry lemon! I went to a little ice cream shop near our home a few weeks ago and they were serving lemon blueberry yogurt. It was incredible. I could have eaten the entire bucket!

You may have seen in my post yesterday that I teamed up Kohl’s to make a few dairy-free soy ice cream recipes. Well, this one was more for me than my son (the family member behind the dairy-free soy ice cream recipes).

Lemon Blueberry Soy Ice Cream

To make homemade blueberry and lemon ice cream you’ll need to first make a blueberry compote. Here’s what you’ll need and how:

  • 2 cups fresh blueberries
  • ⅓ cup granulated sugar
  • ⅓ cup water

In a small saucepan over medium heat, combine the blueberries, sugar and water. Simmer until the blueberries begin to burst, stirring often, for about 8-10 minutes. Cook until the compote coats your spoon, for about another 4-5 minutes. Remove from heat and allow to cool completely. Yields about a cup.

And for the ice cream recipe, you’ll need:

  • 2 cups powdered sugar
  • 8 egg yolks
  • 2 teaspoon cornstarch
  • 4 cups soymilk (I used vanilla soymilk)
  • 2 teaspoon vanilla extract
  • 1/2 cup blueberry compote
  • 1/2 cup lemon juice
  • Nostalgia Ice Cream Maker (available at Kohl’s)

Lemon Blueberry Ice Cream Recipe

Easy steps:

  1. Mix eggs yolks, sugar and corn starch.
  2. Heat soy milk (not boiling, but hot) in sauce pan and slowly pour into mixture while continuing to mix. (NOTE: Again, not boiling or you’ll cook the egg!)
  3. Add vanilla extract while continuing to mix.
  4. Pour mixture into a sauce pan and gently heat until it thickens.
  5. Let the mixture cool in the refrigerator for three to four hours.
  6. Fold in blueberries and lemon juice.
  7. Pour mixture into ice cream maker and follow the maker instructions.

Yields about one quart.

best ever OREO ice cream recipe

Ice Cream Recipe

Ice cream recipes… vanilla, chocolate, strawberry, blueberry… have been on my mind for the past few weeks.

My youngest has severe food allergies and at the top of that list is dairy… which can make summer treats very hard. When all the other kiddos are running to the ice cream truck and picking anything they want off the menu, my little one has to ask to read the label before he can start munching. He handles it well… better than I would at his age… but it makes my heart hurt that he has to.

So I teamed up with Kohl’s to make a few dairy-free soy ice cream recipes. (Blueberry and lemon ice cream recipe is coming tomorrow!)

I have to say, I think I’ve nailed it. It tastes like the old-fashioned ice cream we used to make when I was a kid. Not only does my little one with food allergies love this OREO ice cream recipe (yep… OREOs have no dairy or egg or nut!), but so does my oldest and he can eat anything!

To make homemade soy OREO ice cream, you’ll need:

  • 2 cups powdered sugar
  • 8 egg yolks
  • 2 teaspoon cornstarch
  • 4 cups soymilk (I used vanilla soymilk)
  • 2 teaspoon vanilla extract
  • 10 crushed OREO cookies (I used chocolate filled OREOs. If you use regular, the ice cream will remain vanilla)
  • Nostalgia Ice Cream Maker (available at Kohl’s)

Ice Cream Recipe

Easy steps:

  1. Mix eggs yolks, sugar and corn starch.
  2. Heat soy milk (not boiling, but hot) in sauce pan and slowly pour into mixture while continuing to mix. (NOTE: Again, not boiling or you’ll cook the egg!)
  3. Add vanilla extract while continuing to mix.
  4. Pour mixture into a sauce pan and gently heat until it thickens.
  5. Let the mixture cool in the refrigerator for three to four hours.
  6. Crush 10 OREO cookies in a resealable bag, fold into cold mixture, add to ice cream maker and churn.

Yields about one quart.

Americana {entertaining ideas for summer}

My hubby was in the Air Force, along with his brothers and dad, so Americana party décor gets a lot of use around my house with Memorial Day, 4th of July and Labor Day celebrations. Whether or not our boys will serve remains to be seen, but we want them to have a strong sense of country and the sacrifices that others make for us daily so that we can live free.

 

Long story short, patriotic holidays are not only celebrated, but truly a time of thankfulness and remembrance for our family.

This year, I shopped World Market’s Americana collection (Outdoor Entertaining, Outdoor Furniture) for our 4th of July BBQ and then meandered over to their linens section to add a few extra touches! The pewter placemats may be my favorite. I chose them, along with the gray and white paper straws because they reminded me of sparklers. One of my favorites from childhood 4th of July picnics, and a fast growing favorite with my boys. They’ve gone through two boxes in the past week!

And if you know me, you know I love paper goods to bring a pop to my tables. I found these fun and creative Americana Meri Meri cupcake tins and toppers at World Market, along with this wire dessert stand. It’s the perfect way to bring some height to your table.

An easy way to make a table feel cozy and inviting outdoors, is to hang lanterns. World Market has the lighting kits so you could bring them alive if you’re celebrating at night! I also had to have the little nutcracker. Or, I should say, my son just had to have it! {grin}

And, especially when serving guests outdoors, you need service trays. This one pulled in both of my major colors, red and pewter. LOVE it for carrying all the supplies to set up the table and then later to serve dessert.

 

Sangria

 

Did you know that World Market isn’t only about home décor and entertaining supplies? They also have a large food and wine section. I’m excited to say that I made an amazing White Strawberry, Lemon and Apple Sangria with World Market’s Castaneda White Sangria!

Ingredients
  • 2 lemons, thinly sliced
  • 1 lemon, sliced thicker and halved for garnish
  • 1 apple, sliced long-way (Gala or Fuji, a crisp apple, works best)
  • 1 cup strawberries, hulled and sliced lengthwise
  • 1 liter White Sangria Castaneda (available at World Market)
Instructions
  1. Add lemon slices, apples, and strawberries to pitcher.
  2. Pour the sangria over top.
  3. Cover and place in the refrigerator for 4 – 5 hours.
  4. Add a lemon slice to each glass and pour sangria over to serve!

Oz The Great And Powerful {DIY wand}

Oz The Great And Powerful

Oz The Great And Powerful Blu-Ray Combo Pack releases in a few short days, on June 11. If you didn’t catch it at the theaters, you simply must see it now. It’s all about how Oz made it to Oz! {grin} Oh, and there is a bit about the witches too. All three of them! {shudder}

I have to say, Disney really did a beautiful job. The colors and characters were amazing… and THE witch had my youngest peeking out from under his blanket. He made his dad come sit next to him. I was there, but I wasn’t enough. {smirk}

The girly in me though was struck by Glinda The Good Witch. Her dress, her crown, oh… and her wand! It was so simple, yet so beautiful!

Oz The Great And Powerful

I mean what girl doesn’t want a wand?! So I thought, why not make a few. Here’s what you’ll need to make an easy DIY candy wand:

  • Marshmallows
  • Pepperidge Farms Pirouette Rolled Wafers (these are French Vanilla!)
  • Pure Cane Sugar
  • White Icing
  • Kitchen Scissors

And the simple how to for making your wands:

  • Trim your marshmallows. Using kitchen scissors, cut each of the corners off your marshmallow so that it looks like a diamond. (TIP: Wash your scissors between each marshmallow or they’ll start to stick.)
  • Add shine. Dip each edge (sticky sides) in pure cane sugar.
  • Attach handle. Dip the end of the wafer in white icing and attach the wand tip. Allow to set for at least 10 minutes before you display.

Rather watch how I made these? Well you’re in luck because I made a little video. And while you’re there, I’d love for you to subscribe to my youtube channel. By the way, my eight year old was my camera man on this one because I couldn’t find the stand. That’s cute though… right?! {grin}

By the way, if you’re having a party, I would display in a 4″ or so tall clear (square if you have it) vase filled half way with more pure cane sugar. Once the wands are dry, just place them in, handle first, so all the good little witches at your party can grab them easily!

We always celebrate with a picnic. It’s my way of getting to enjoy the day too. No house to clean, grab some awesome goodies from the store, pick a patch of grass and call it a party! {wink}

My family celebrated Mother’s Day a little early this year. See, my brother and his beautiful family live down south and I live in Ohio. We only get to see each other a few times a year and so when we do we try to cram in all the holidays and celebrations we can. Well this week he’s here!

I normally would share my awesome mom with you when talking Mother’s Day, but this year I want to honor my sister-in-law. My brother and his wife were blessed with three girls and a boy. All of which are now in college or in their last few years of high school. Then along came baby!! They were blessed with one more. And did they hit the lottery!

My sweet little niece is so incredibly precious. Bouncy red hair, a sprinkling of freckles and a loving personality. And what makes her even more special, she has Down Syndrome.

I’m sharing this with you today for a few reasons. One, I love my sweet little niece and I want to show her off.

AND, because my sister-in-law, her mom, deserves some praise. She’s a calm and relaxed personality by nature. When she and my brother were in high school he used to take me along on their dates sometimes… yep. My parents were getting divorced and he and I lived in two separate homes at the time so we didn’t see each other as much as we wanted so he’d let me tag-a-long. And you know what, she never seemed to mind. As a matter of fact, she even acted like she enjoyed having me around. Even though I was 12 and they were 16. They’re just kind hearted, loving people.

And now I watch them with their little girl and I think God chose this little soul especially for them. My sister-in-law with her gentle nature, never ending patience and big heart makes me proud to call her family.

So now that I’ve gotten a bit teary-eyed, let’s talk Mothers Day picnics. As I mentioned at the beginning we’ve been hosting them for years at a local park. The kids play, we eat — no mess, no fuss. This year we took my niece to the zoo, but no matter where you go, you can host the day with style!

I chose to shop World Market. Everything in the store is just so bright and bubbly right now. And there is tons of chevron… hence the aqua and white chevron throw we used for our picnic. My little niece took a liking to it. It will be going home with her (and her momma). {grin}

Mother’s Day craft – monogram pots

My little alien and I made a Mother’s Day craft yesterday. {grin}

He’s six now, so he’s incredibly independent and always wants to do everything by himself.

As you ladies know, when it comes to paint we can cringe a little sometimes. But guess what?! The new Modge Podge Washout… washes out… of clothing and furniture with soap and water, even when it dries before you get to it! It’s perfect for us and teachers. Just machine wash whatever it is. No pre-soak needed. And I use Apple Barrel paint all the time because clean-up is so easy when it’s wet.

So I set him up with a few supplies and let him go. There is something to be said for just letting kids be creative. For this project you’ll need:

We started by making plant markers. He dipped them in Apple Barrel paint and then we stood them upright to dry in a cup of uncooked rice.

Next we moved on to decorating flower pots. He wanted to monogram one with an “M” for Mimi, what he calls my mom.

And then he wanted to monogram one with an “L” for Love. I think the “L” was also the easiest letter to cut out of the fabric. “G” for Grandma seemed like too much work. {wink}

As you can see, he painted over the “L” but it does take a while to dry. If you’re in a hurry, you could also just douse the letter in Mod Podge Washout and apply.

Now on to planting. He chose these Begonias from our trip to the nursery. He and I both loved the deep and bright orange color!

By the time he was done planting the plant markers were dry and he wrote sweet little messages on them.

One of the things I loved most about this project is that my little guy can claim that he truly did this project on his own, which of course will make it that much more special to his Mimi and Grandma. Now, if you know them, just don’t ruin the surprise. {wink}

Healthy party snacks

As a mom that owns a party planning company, you might think my kids live on cupcakes and candy bars. Honestly it’s quite the opposite. My kiddos are a bit desensitized to all the snacks that make their way through our kitchen and the studio. Thank goodness!

And as a mom constantly taking snacks to school, hosting holiday parties and play dates, I’m always on the lookout for healthy party snacks. Yummy treats that the kids will enjoy and we moms can still feel good about. That’s why when offered to share Green Giants new Veggie Chips I was all in.

Raising A Reader with LeapFrog

I’m a reader. I have boys. I want them to be readers… And we all know that boys are less likely to keep reading (when not forced) than girls. That is why I started from the moment they were born. Reading together every night for at least 20 minutes in our house is not only a family tradition/habit, but also a reward.

I actually hate to admit this… but I’m going to just so you can get a feel for how much my boys love to read. If they’re jumping on the bed… not brushing their teeth… giggling so much they can’t breath… I simply threaten “okay, no book tonight!” and they immediately and I do honestly mean immediately, straighten up. And I don’t have toddlers anymore {sad smile}, my oldest is eight! And he reads at a 6th grade level (AR 6.2). Yep. I’m a proud momma.

Now just so you know, not everything we read is a great tale. Nope. I’ve read more science books (even parts of my old college Biology textbook to them… don’t get me started!) about creepy crawly slithery critters, space and electronics, African animals, weather, etc. than I care to name. But they loved it. And… I learned a thing or two right along with them. {grin}

My youngest has a particular fascination with dinosaurs, and he has since he was two. (Ever seen his 4th birthday Dinosaur Party? It was featured in Parents magazine!)

My point is, read what THEY like. It will keep them interested and eager. My oldest actually got grumpy with me recently when his little brother and I went to the library before we picked him up from school… he told me that just wasn’t fair! {grin}

At this point I feel I have to also tell you that both of my boys are big into sports too. They are energetic and social… and readers! They play baseball, soccer, basketball, tennis, golf and they swim. Yes… I know… we’re honing it down to our favorite sports. I only allow one sport at a time, unless it’s summer, and that is becoming more difficult the older they get. {smirk}

Okay, so if you didn’t start reading to your little people from day one. No worries and no shame. OR, if you did and your kiddos are doing great, but you’re looking for something interesting to keep them going (I’m always on the look out for something new to keep them engaged).

I’m a lover of the hardback book… my kids are growing up in the age of technology… LeapFrog offers a melding of the two complete with reading, spelling, games, science, and more. By the way, did I mention he’s a dinosaur lover. I should have taken a picture of his playroom for you… we have every dinosaur toy sold. Literally.
