St. Patrick’s Day: Easy Shamrock Cupcakes with Mint Frosting

It’s time to start thinking green! These fun 4-leaf clover, Lucky green, cupcakes with mint icing are the perfect way to celebrate St. Patrick’s Day.

This fun little cupcake is super easy with just a few goodies. Green chocolate covered sunflower seeds from Candy Galaxy (they have every color candy!) and Breyer’s chocolate sprinkles (the only sprinkles my kids actually like!).

And the mint frosting is a cinch. There are tons of amazing recipes from scratch, but when in a hurry I use Pillsbury icing (dairy-free for my little guy and always fluffy) and mix in 1/2 teaspoon of mint extract.

And since this is St. Patrick’s Day, I also mix in green gel food coloring (the other is too watery) until I get my desired color. (TIP: Tint your icing and let it set for five minutes before adding more food coloring. It will darken a bit.)
